Happy Spring! It’s been awhile since I’ve sat down and blogged, so I thought I would share a recipe we made for my girl’s birthday. My now three-year old requested pink cupcakes for weeks leading up to her "flower/meow meow” birthday, so I made it happen by making super moist funfetti cupcakes (upgraded cake-mix recipe) with sweet strawberry buttercream. It was the perfect rainy-day treat for my not-a-fan-of-chocolate girly. (But really, who doesn’t like chocolate?) Although, I should mention that she basically only ate the buttercream because that's just how she rolls.
A few things to mention to keep these cupcakes moist. First, don’t overfill the cupcake liners—always level off the scoop with a knife. This will ensure that the cupcakes are equally portioned and finish baking at the same time. Also, muffin-tops are great and all, just not when you’re trying to look more like a cupcake than a muffin!
Next, do not over-bake cupcakes unless you want a dry crumb! The finished product should barely have browning on the edges. After removing the cupcakes from the oven, let them cool in the pan only for a couple of minutes before allowing cupcakes to finish cooling on a wire rack.
Finally, store cupcakes properly to keep them moist and fresh until you eat them. If it’s a day or more before the party, wrap unfrosted cupcakes in plastic and store in freezer until the day of the event. If you’re storing the cupcakes in the fridge, make sure they are frosted to lock in moisture.
1 package funfetti/rainbow bit cake mix
1 (4 ounce) box instant vanilla pudding mix
1 cup sour cream
1⁄2 cup water
1⁄2 cup canola oil
4 large eggs, lightly beaten
1 teaspoon vanilla
1 cup salted butter, room temperature
1 cup frozen (or fresh) strawberries
1-2 teaspoons lemon juice (I just squeeze some in)
3 1/2 to 4 cups powdered/icing sugar, sifted
1 teaspoon vanilla extract
