Two years ago I started this little blog. I really had no idea what my passion was or what I exactly wanted to write about. I just knew I had to start writing.
Up until this week, the only vegetables my preschooler hadn’t turned his nose up at were cucumbers and green salads. It’s oddly difficult to admit this as a dietitian, because I feel as though my kids should be adventurous little eaters with Brussels sprouts and quinoa as favourite foods. (But I also know as a dietitian that’s just nonsense.) So what have mealtimes and snacks looked like in our home?
Seven years ago on the twenty-sixth of November my husband and I said “I do.” Actually, 2017 marks a whole decade since we exchanged our first “hellos” in a Tim Hortons coffee shop and soon thereafter began our long-distance relationship. Now I could go on and on about what makes my husband the best husband ever (for me, of course!)...However, this Thanksgiving week I’ve also been reminiscing and really just standing in awe of the greatness and perfect sovereignty of our Lord God. The intricate details of my life could have only been woven together by an all-powerful, all-knowing Creator. From before I was born, he knew all the details of my life. He knew my character, my personality, my circumstances and the journey I would take.
I’d like to share a little today on how God has faithfully provided for me since the day I was born. But even more so, I hope this encourages you to look back and document his provision and protection over your own life.
Let’s be real with each other. What do your lunches usually look like? Before I went on maternity leave, I strategically packed lunches for work so I could devour them whenever the hunger monster struck. (Except those days where I forgot my lunch and regretfully grabbed a bagel from Tim Hortons instead… my coworkers know what I’m talking about.) Now lunches usually consist of a hodgepodge of finger foods… you know—fresh-cut veggies and hummus, cheese and crackers, yogurt and berry parfaits, peanut butter sandwiches… or leftovers. Basically whatever my preschooler eats, I eat. But other days, when I’m feeling especially motivated (or my kids are in an especially good mood), I love to whip up something that’s not only good-for-you but oh-so-satisfying as well. This vegetable and fried cauliflower rice topped with eggs is just that.
These last eight weeks were the longest-shortest weeks of my life.
Of course, I’m sure every mom of a newborn has thought the exact same thing. Since my three-year old was born, I had somehow forgotten how the nights seemingly drag on and the weeks fly by. My little Kate is already eight weeks old! And in those eight short weeks, I’ve been reminded nearly daily that we’re not meant to live life on our own. We were made to be in ongoing communion with God and to find community with others.
I’m not going to lie. Many of the days since Kate’s birth were really hard. (Really hard = short for tear-filled, ugly, and painfully exhausting days). Big life changes are hard. After the birth of Liam in 2014, every day seemed like an uphill climb to nowhere with no relief in sight.
