A while back I shared on Instagram that I've decided to become a gardener. (Basically get a little more involved in yard work than just mowing.) My hope was to plant a few flowers and start a small vegetable garden. Well, once my husband caught wind, his wheels started turning, too. So what started as a small venture into gardening. . . is now a full-blown backyard construction site. And not just our yard, the neighbour's, too. Three full dump trucks of soil removed and a couple more loads of rocks tampered down. . . and we've got ourselves the beginnings of some patios!
This picture was taken after the first two whole days worth of work. I definitely didn't realize how much work it would take to get this far!
Okay, so before you picture me trekking around with wheelbarrows full of rock, I should clarify I was on kid, drinks, and food duty during the inaugural weekend of this summer's backyard shenanigans. But these guys rocked the wheelbarrows practically from sun up to sun down!
And like any four-year old boy, Liam had a blast helping with the excavation . . .
. . . and playing on the rock piles. For hours. Upon hours. Upon more hours. We should basically just keep a pile of rocks in our backyard.
Anyways . . . since the guys were working through the first unofficial weekend of summer, I thought it would be fun to celebrate the gorgeous weather with some homemade ice cream sandwiches! My preschooler and I simply baked "mini" versions our favourite chocolate chip oatmeal cookies with toffee bits for that extra caramel-y taste. Then once they were cooled, we wedged a dollop of vanilla ice cream between two cookies and threw them back in the freezer until it was time to eat!
Now if you look closely at the picture, they looked far from perfect . . . HOWEVER, I'm really trying to let go of perfectionism and allow my boy to get messy and create in the kitchen, too. He had the time of his life. (And was super excited to eat the only sandwich rolled in sprinkles. Sprinkle-fying is not my strong suit.)
You could really make tasty ice cream sandwiches with any kind of homemade cookies, but if you're looking for the extra chewy, caramel-y, chocolatey kind, this recipe is sure to hit the spot. It reminds me of my dad's favourite chocolate chip oatmeal cookies from my childhood. SO good.
Yield: ~2 dozen ice cream sandwiches (depends on how big you make the cookies!)
To make the cookies:
1 cup salted butter (room temperature)
1 cup white sugar
1 cup brown sugar
1 teaspoon vanilla
2 cups flour (sifted)
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups old-fashioned oats
1 1/2 cups semi-sweet chocolate chips (a little less than a bag)
1/2 cup toffee bits
To make the sandwiches:
Vanilla Ice Cream (My favourite is from Kawartha Dairy!)
Sprinkles or mini chocolate chips (If you're feeling fancy)
