Hello, I'm Erin – a registered dietitian, loving wife, mommy of one, self-proclaimed foodie, and chronic maker of lists. I had my whole career 'perfectly' planned out until my son joined our family the last semester of grad school. Life got a little more complicated, and I eventually began to adjust to this new norm – motherhood.
But for first time that I could remember, I struggled with finding balance between passions: nutrition & education and faith & family.
After juggling the completion of internships, graduate thesis, and coursework with midnight feedings and diaper changes, I graduated from D'Youville College in May of 2014 with a Bachelor and Master of Science in Dietetics. Finally! I could sit for my registration exam and become a dietitian! Well, if there's one thing I learned from motherhood, it's that everything takes longer than originally planned: prepping meals, leaving the house on time, folding laundry (while your child demolishes the nicely stacked clothing piles) – you get the picture. I spent the summer squeezing in an hour of studying here and there, and before I knew it – the day of exam had arrived!
To this day I still remember sitting in my car outside of the testing center and promising myself three things: (a) to never procrastinate again, (b) to use the knowledge and skills I've learned to help others, and (c) to never let my career become more important than faith & family.
And that's why I've created this blog.
Although it's impossible to promise that I'll never procrastinate again or complete every to-do list, I can actively work on living out my good intentions. I can make nutrition, health, family time, and my relationship with Jesus Christ all priorities – while inspiring and helping others do the same!
