Hi there! Well now that you know why I started Beyond the Dinner Table, let me tell you a little bit more about me!
The first part of my life I spent growing up in small town Iowa. You know the drill… everyone knows you by name and those who you don’t know say hi to you on the street anyways. But I loved it.

Soon enough I was graduating high school and it was time to answer two of the biggest questions thus far in my life: 1) WHAT am I going to do with my life? And 2) WHERE should I go to college? Oh — and I had to factor in my “high school sweetheart” who just happened to be Canadian and was living all the way over in Ontario. (More on that another day!)

With all that in mind, I decided to start college in the Minnesota State dietetics program. But something didn’t feel completely right. One morning after a hard conversation with my now husband, I woke up knowing that God was calling me to move once more across the country. That’s when I started the Coordinated Dietetics Program at D’Youville College in Buffalo, New York. Five years to a combined bachelor’s and master’s in science with internships built into the program? Sounds like a plan to me.

I remember one of my dietetics professors saying there are three things to avoid if you want to graduate on time:
1. Planning a wedding and getting married, 2. Moving to a new home, 3. And having a baby. Apparently I took that advice as more of a challenge and did all three! (But not without the stress, tears, and prayers that come along with it.) |
Thankfully I made it out alive — graduating May of 2014 and becoming a Registered Dietitian in both the United States and Canada that Fall.

Now I have the pleasure of being a full-time wife and mama while using my nutrition knowledge as a clinical dietitian and aspiring writer.
